Novela, a high-volume craft cocktail bar with a seasonal food program in the Financial District, seeks the correct person to oversee our Kitchen and Back of House as we reopen to a post-pandemic world. In addition to busy daily service, we have an historically very busy Private Events program that relies heavily on our food for sales.  

 As related to COVID, we have been operating on a To-Go basis since May, and have experienced positive return that allows us to look toward the future. We are currently serving on an outdoor Patio space as well (minimally sat), and will reopen to indoor on par with standards and timeline that are safe for San Francisco. Our Executive Chef will begin splitting time with another location so we must find him some support and leadership for the team.  Catering background in a plus.

Duties include but are not limited to daily ordering and receiving, inventory and quality control, leading and directly prep and line, overseeing and managing scheduling, working directly with management and ownership on all kitchen issues, menu development and cost control efforts.  

 An ideal candidate:  


  • - Has  2-3 Years experience in Kitchen Leadership / Management role 

  • - Can meet set Food Cost and Labor goals set by Operating Managers   

  • - Has Basic Baking Skills - 

  • -  Knows Basic Pastry Skills

Ensures that orders are prepared in order and garnished properly, according to specification. Ensures hot food is served hot, cold food is served cold and inferior products are never served. 100% compliance to food safety standards, recipes and procedures is essential.


Essential Duties and Responsibilities


• All items are cooked, prepared and garnished according to the recipe within the standard cook or preparation time frames.


• Ensure that all foods used in preparation meets The Eatery’s specifications for quality, shelf life and brand.


• Keep updated and knowledgeable on all recipe changes. Utilize the most recent recipes as dictated by management.


• Clean and sanitize workstation, utensils and equipment throughout the day. Always work clean, following the Food Handling Procedures.


• Keep all food, prepared and received, in proper rotation. “First In First Out”.


• Communicate product issues such as “shortages” and “outs” with all line positions, cashiers and management.


• Complete assigned prep work, as per Prep List. Stock station, as per par levels listed on the prep list.


• Set up station with proper utensils and equipment as per the Line and Station Set up Guide. Complete cleaning duties as assigned by management.


• Communicate with management throughout the shift for product par levels necessary for the time of day.


• Perform other duties and responsibilities as requested.


 


Qualification Standards


• Stands/works/moves during entire shift with frequent bending and stooping. Lifts and carries sacks and cases of up to 30 lbs. multiple times per shift.


• Be able to acknowledge hazards such as broken glass, burns, slipping, and tripping.


• Able to work with different types of kitchen equipment including , but not limited to: convection ovens, warming drawers, soup kettles, hot plate area, tea/coffee brewing machine, and bread slicer.


• Be able to read menu items and understand ticket orders.


• Be able to hear and communicate with managers, associates, and guests in the midst of loud background noises.


• Be able to pass recipe and food quality tests as required
