Food Production:

  • Cuts meat according to product specifications and time standards.

  • Complete use and following of the buffet production system to insure quality and shelf life compliance.

  • Rotates cut and boxed meat to ensure freshness.

  • Stocks and arranges the Meat Cooler in accordance with approved food safety guidelines.


  • To eliminate cross-contamination, sanitizes all surfaces between production of chicken and any other meat.

  • Recognizes that meat is bad when it is sticky, slick or smells bad.

  • Cleans and sanitizes the meat room according to cleanliness, service, and quality standards.

  • Follows local health department laws.

Operational Excellence:

  • Uses administration forms to maintain an inventory of all meat products and to determine the production level.

  • Notifies the Manager of any discrepancies in product or equipment.

  • Performs opening and closing administrative procedures.

  • Properly maintains equipment according to the Equipment Maintenance manual.

  • Performs duty roster tasks.

A local meat packing plant is looking for experienced Meat Cutters/Butchers with previous experience in retail or manufacturing plants cutting beef and pork. Experience from the restaurant industry as a chef will also be considered.  


  • Ensures production goals are met for on-time delivery

  • Identifies primal/sub primal cuts

  • Maintains a sharp knife

  • Maintains clean & safe work area

  • Labels bins correctly

  • Follows directions accurately

  • Follows Safety Protocols/PPE

  • Communicates quality issues to supervisor

  • Knows all cut orders/cut language in & out

  • Runs pallets and combos as orders are finished

·         Package, wrap, weigh, stamp, mark and accurately price and label merchandise for retail sale

·         Prepare Grab & Go Case and Butcher Case and ensure that they are full and fresh at all times

·         Proper labeling of all products in cases as well as refrigerators

·         Maintain proper temperature and humidity levels within coolers and/or freezers on a regular basis

·         Properly prepare orders that are to be submitted in a timely manner

·         Properly wash and sanitize table in between poultry, beef, and pork

·         Ensure product availability, quality and freshness by proper rotation, stocking and replenishing of products to help maximize profitability and minimize shrink
