Summary of Position:

Tips are given to the cooks at the end of the shift. The amount varies depending on how busy it is, but it is usually approximately 10 extra dollar per kitchen employee per shift in cash.

SUMMARY: Under the direction of the Executive Chef is responsible for preparing menu items as assigned following prescribed recipes and standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

• Set up station and collect all necessary supplies to prepare menu for service including arranging sauces and supplementary garnishes for allocated station

• Prepare a variety of foods; meat, seafood, poultry, vegetable and cold food items following recipes and food preparation standards.

• Cover, date and correctly store all food products making sure all storage areas are tidy and all products are stored appropriately.

• Notify Executive Chef or management in advance of likely shortages.

• Serve menu items compliant with established standards.

• Use food preparation tools in accordance with manufactures instructions and utilizing provided personal protective equipment.

• Maintain a prepared and sanitary work area at all times constantly using safe and hygienic food handling practices

• Return dirty food preparation utensils to the appropriate areas for cleaning.

Other duties:

  • Attends all mandatory meetings and in-services.

  • Exhibits clean and professional appearance and follows dress code standards.

  • Demonstrates respect for and promotes resident rights including dignity, self determination and access to care, confidentiality and independence.

  • Complies with all safety policies and procedures, identifying and immediately reporting any potential or actual unsafe acts or conditions to the Executive Director. Follows all safety precautions, including use of necessary devices or equipment, to ensure a safe work environment.

  • Complies with all community policies and procedures.

EDUCATION and/or EXPERIENCE: experience and/or training. Associates degree in culinary arts, ServSafe Certified and 1 year of experience in a professional kitchen, preferably in the hospitality industry or an equivalent amount of education and experience.

  • Be able to work a variety of hours, days and shifts, including weekends

  • Observe line cook employees' standards, strengths and weaknesses, communicate observations to management, partners and trainers and assist in developing and implementing necessary plans of action

  • Understand and follow the food allergy procedure and special orders/restrictions

  • Comply with all safety and sanitation (including handwashing) guidelines and procedures

  • Other duties will be assigned as needed

Skills & Requirements

  • Must have 2 years of related (high volume) kitchen management experience

Working conditions:

This position may require employees to work in a small space with high temperatures and hot cooking surfaces. This position may require working late hours, week nights, and weekends as well as holidays. Physical requirements

This position requires standing for extended periods of time. Working under hot temperatures near hot cooking surfaces. It may require heavy lifting occasionally and working with sharp utensils. It may require the individual to work in cold temperatures. Handle frozen food. Handle food that may be contaminated such as raw food and seafood. May be required to handle difficult employees, difficult guests, and assist with any other critical operational demands.
