Chicken items must be fully cooked before being plated

Follow proper hygiene and sanitation procedures, hands must be washed after handling of any raw meats, use hand towels to dry hands instead of aprons

All cutting knives must be clean at all times

Kitchen station must be clean at all times, free of debris and spillage

Keep floors clean at all times

Maintain all freezers and refrigerators at proper temperatures

Make freezer pulls as directed or as needed

Identify all necessary food prep at the start of each shift and all food prep is sufficient for the next shift

Make sure inventory deliveries are stored in proper locations and in a timely manner

Report any shortages of food supplies immediately

The Position:

The Chef is responsible for overseeing daily BOH operations while working directly with our Corporate Chef to ensure that our menu items are prepared and served in a manner that meets our company standards. In this role, the Chef will streamline communication between the culinary and FOH teams while also maintaining organized records of purchase orders and inventory. This position demands professionalism, exemplary culinary skills, kitchen equipment knowledge, strong time management and great communication skills. • Mobilize a passionate team of BOH staff members in order to ensure a successful restaurant operation that meets food quality, customer service, and sales expectations

• Provide leadership, support and guidance to all levels of BOH staffing

• Maintain a clean facility that complies to all Department of Health regulations and which is prepared for a city or internal inspection at any given time

• Prepare and serve menu items per company standards

• Work with Limon’s Corporate Chef to develop innovative menu items and promotional specials

• Order and maintain inventory of necessary supplies

• Hire, train, and retain a strong team of supporting chefs and cooks

• Take a leadership role in daily pre-service meetings

• Respond promptly to customer questions and/or concerns

Job Requirements:

• Minimum of 3 - 5 years of kitchen management experience in a full-service restaurant

• Strong attention to detail

• Excellent written and verbal communication skills

• Must be proficient in Microsoft Word and Excel and be able to communicate effectively by email, phone, and in person

• Must be able to lift 30 – 50 lbs

• Must have the ability to stand for long periods of time

• Must be able to work nights and weekends

• Knowledge of Peruvian cuisine a plus

The Muriel Wright Recovery Center CRT is a 15-bed, voluntary crisis residential treatment center on Santa Clara County’s Muriel Wright behavioral health campus in San Jose, California. The CRT is co-located on the same campus as the Substance Use Treatment Services (SUTS) program. The program was created as an alternative to and diversion from Emergency Psychiatric Services (EPS), acute psychiatric hospitalization, and incarceration. The CRT will serve a co-ed population with 90% male and 10% female census predicted; all referrals will be persons with justice-involved mental health status. The average length of stay for this program is 14-21 days. The Muriel Wright Recovery Center CRT program is under contract with Santa Clara County Behavioral Health Services Department.

Sign-On Bonus: $500.00

Employment Status: Full-Time

Shifts: Days, 10:30 am - 7:00 pm

Days: Tuesday - Saturday

POSITION SUMMARY

The Cook is responsible for the ordering, preparation, cooking and serving of food to members served. This includes seasoning and cooking meat, fish, vegetables, soups, salads and desserts.

 

 

QUALIFICATIONS

Required:


  • Two (2) years of experience in food production and knowledge of therapeutic diets

  • High School graduation or a G.E.D. equivalent

  • Experience in the use of institutional kitchen equipment such as steam tables, stoves, refrigerators and freezers

  • Knowledge of nutritional principles in the preparation of regular and therapeutic diets

  • Must be at least 18 years of age

  • Must be CPR, Crisis Prevention Institute (CPI), and First Aid certified on date of employment or within 60 days of employment and maintain current certification throughout employment
