The GM is responsible for all aspects of day-to-day unit operations from service to financial and cost management to overall team leadership and management. THE DETAILS:



  • Oversee day to day operations and manage all unit employees


    • Create a warm, welcoming work environment and help cultivate company culture

    • Interface with customers, taking orders/reservations, touching tables

    • Promote and train 
weekly specials and holiday menus 


    • Collaborate with the culinary team to ensure food quality and consistency are maintained and safe food handling practices are followed

    • Ensure that every plate of food served is up to Wise Sons standards and speed of service is maintained

    • Ensure proper storage of all foodstuffs including proper cooling and holding temperatures, 
labeling and FIFO rotation

    • Monitor complaints and address concerns and feedback as necessary, respond to Yelp

    • Coordinate with the Catering Manager to complete catering orders

    • Oversee cleanliness and organization of the restaurant utilizing open/close checklists to preserve the cleanliness of the unit including equipment maintenance and safety 





  • Financial management


    • Daily financial reporting, POS updates and audits (menu pricing), upload receipts and invoices, enter CTUIT communications logs, and all HR related procedures

    • Cash handling, bank deposits and tips




  • Cost management including labor and food


    • Oversee all cafe FOH & BOH staffing, including but not limited to: scheduling and training of staff for efficient service; hiring, disciplining, and terminating employees while adhering to both Wise Sons policies and California labor law; monitoring and reporting staff breaks and hours

    • Maintain food costs; Order and inventory all products

Job Description:

The Head Chef & Kitchen Manager is responsible for the good food, staff performance, cleanliness and efficiency of the Bette's To Go kitchen, which serves 600+ take away meals a day. They are the primary person responsible for preparing all food for lunch service (salads, special sandwiches, pizza dough, frittata, etc.), with assistance from other kitchen employees.

They will maintain our standards of fast and friendly service, while working closely with manager of front of house around food handling, food presentation, as well as personnel and operational issues. They will also coordinate food usage and purchasing with Diner Kitchen Manager. Promoting a spirit of teamwork and cooperation among staff is a priority.

Responsibilities:

Food

- Makes sure that staff follows recipes and approved methods so that food is consistent in appearance and taste

- Write weekly menu of special sandwiches, salads, soups and pizza

- Improve and update recipes as needed

- Create new, seasonal specials

- Determine prep list for the staff every morning - Inventory food and order additional supplies while controlling food costs

Personnel

- Hire, orient, train and supervise kitchen staff in preparation of all food

- Coordinate all kitchen tasks

- Monitor kitchen cleanliness, food rotation, storage and sanitation

Service

Accomplishes restaurant human resource objectives by recruiting, selecting, orienting, training. Assigning, scheduling, coaching, counseling, and disciplining management staff; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; enforcing policies and procedures.

Responsible for the units Performance Management & follow through on Termination Guidelines, Conduct Evaluations, Execution of training, coaching, delegation of tasks and responsibilities, Time Management and Organization

Maintains safe, secure, and healthy facility environment by establishing, following, and enforcing sanitation standards and procedures; complying with health and legal regulations; maintaining security systems, Crisis management and loss prevention, and Facilities and Maintenance

Accomplishes company goals by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.

Facilitate workshops and /or meetings

Work as trouble shooter in a specific restaurant to correct an operational problem (cost control, staffing, hospitality standards, etc.)

Utilize Delegation Model to ensure that all operational tasks and responsibilities are being accomplished according to standards.

Other tasks as assigned.

Qualifications and Education Requirements:

Minimum of 5 years recent restaurant management experience.

A college degree is a plus.

Ability to remain calm under pressure and in a fast-paced environment.

Leadership Skills: General Managers must be leaders, rallying their team during busy shifts, resolving conflicts and getting the job done.

Reliable transportation and ability to arrive to work on time and maintain a positive attendance record.

Ability to work a flexible schedule, including weekends and evenings.

Professional communication (verbal and written), good organization, and interpersonal skills to establish and maintain effective working relationships with co-workers.

ServeSafe Certification maintained in good standing. Ensures staff has current Food Handlers Cards.

Competencies: Cost accounting, developing budgets, decision making, process improvement, strategic planning, computer & communication proficiency, cleanliness and quality focus, time management, strong leadership skills, multi-tasker, safety-minded, team player.
