JOB SUMMARY

Prepares and produces nutritious, well‑balanced meals in accordance with current applicable federal, state and local standards, guidelines and regulations, established policies and procedures, to assure that quality food service is provided at all times.

ESSENTIAL FUNCTIONS

Prepares foods in a timely manner, in accordance with sanitary regulations, and in accordance with planned menus as well as established policies and procedures.

Develops and maintains a good working rapport with inter‑department personnel to assure that food service is properly maintained to meet the needs of the residents.

Handles, stores, and rotates foods and supplies in the proper manner.

Assures that the food production area and equipment are in good condition, properly sanitized and free of safety hazards.

Supervises the serving of meals and ensures the food is at proper temperature, properly styled, palatable and appetizing in appearance.

Handles leftover foods by properly storing, wrapping, labeling and dating or properly follows up to ensure usage or disposal.

Prepares food for therapeutic diets in accordance with planned menus, standardized recipes, and special diet orders.

Consults with Director of Dining Services or Chef regarding food production and carries out other duties as assigned by Chef or Supervisors.

Maintains a good working relationship with co-workers.

Position available for a casual/on-call line cook. Days vary depending on need; Hours are either from 5:00am - 1:30 or 11:00 am – 7:30 pm depending on need. 


We are a 24/7 facility therefore one must be able to work weekends and holidays as required.


All applicants are required to complete and pass a drug screening, physical exam with tuberculosis (TB) skin test, and criminal clearance through FBI and Department of Justice. The background search includes minor misdemeanors and DUIs.


The person selected for this position must be Serve-safe certified, have a demonstrable knowledge of HACCP and procedures, culinary training and experience preferred and 3+ years in a similar cooking environment.


Ideal candidates have a strong work ethic, are hospitality minded, always put forth their best effort, excellent communication skills, follow directions and guidance from supervisory and management team, able to work well with others and adhere to safety and sanitation regulations, possess a sense of urgency, pay attention to the "little things", and are able to function in a high volume, fast-paced, multi-tasking environment.


ESSENTIAL JOB DUTIES:



  • Prepares all soups, stocks, sauces; boils, braises and roasts items as per standardized recipes.

  • Prepares and serves all sauteed, fried, grilled, steamed and baked items as per standardized recipes.

  • Prepares or directs the preparation of all food served, following standard recipes and special diet orders. Plans food production to coordinate with meal serving hours, so that excellence, quality, temperature and appearance of food is preserved.

  • Determines amount and type of food and supplies required for daily menus and seeing that supplies are obtained from storage areas in adequate time for meal production.


QUALIFICATIONS:



  • Ability to understand and follow instructions in English, communicate effectively, and perform simple arithmetic. Ability to understand measurements and conversions.

  • A minimum of three years experience as a cook in a hotel, restaurant, club or similar institution.

  • Ability to plan and organize work, to interpret instructions, recipes, specifications and standards.

  • Knowledge of kitchen equipment operations and maintenance. Some knowledge of nutrition and diet.


PHYSICAL REQUIREMENTS/WORKING CONDITIONS:



  • Must be able to stand or walk for up to 8 hours per day.

  • Must be able to bend, stoop, and stretch frequently throughout the day.

  • Moderate to heavy physical effort needed infrequently.

  • Manual dexterity for preparing food.

  • Ability to use standard industrial kitchen appliances required.

  • Must be able to lift up to 50 lbs. independently.

  • May be exposed to extreme temperatures (freezers and stoves-range burners) for short periods of time.

  • May be exposed to industrial cleaning chemicals.

  • Must be able to see, hear, and communicate with others.
