Responsible for making sure that all cooking procedures and recipes are followed according to Good Day Cafe standards.

At the end of shift, make sure that all stations are fully stocked for cooking at every meal period, following all food safety and sanitation procedures to avoid cross contamination

All hot food items must be cooked at proper temperatures, following cooking procedures

All cold food items must be prepared at proper temperatures, following proper procedures

All food orders coming out of the printer must be read correctly to make sure that all plates are complete according to the order received, every order must be complete before going out of the window

Breakfast meals are to be cooked to order, making sure that eggs are cooked properly ie…over easy, sunny side up

Cook items according to customer modifications

All meats must be cooked at the proper temperatures,

Chicken items must be fully cooked before being plated

Follow proper hygiene and sanitation procedures, hands must be washed after handling of any raw meats, use hand towels to dry hands instead of aprons

All cutting knives must be clean at all times

Kitchen station must be clean at all times, free of debris and spillage

Keep floors clean at all times

Maintain all freezers and refrigerators at proper temperatures

Make freezer pulls as directed or as needed

Identify all necessary food prep at the start of each shift and all food prep is sufficient for the next shift

Make sure inventory deliveries are stored in proper locations and in a timely manner

Report any shortages of food supplies immediately

Aid in the weekly food & supply orders

Make sure to use safety procedures while in the cooking line

Responsible to deep clean kitchen line at the end of each shift

Ensure all boxes are broken down and recycled by the end of each shift

Must be available at 6:30am to open the restaurant

Must be available until all side work and cleaning is completed at the end of each shift

Must be flexible to perform dishwasher responsibilities as needed

The primary responsibility of the Consulting Chef is to develop and execute CIA Consulting projects and custom programs across the branch campuses and at off campus locations. The Consulting Chef works closely with all stakeholders to organize, schedule, and execute a myriad of programs and projects.

 

The CIA Consulting Chef has a direct responsibility for the successful execution of specific custom / client programs and works diligently to ensure the constant refinement and integrity of that programs. Assignments will include, but are not limited to, Menu Development, R&D Process Collaboration, Culinary Flavor Immersion Programs, Culinary Training Programs, working on media projects, and other assignments in intellectual property, contributing to photography and video projects, and other assignments in Culinary Arts. ESSENTIAL RESPONSIBILITIES

 


  • Develops and executes various CIA Consulting Projects.

  • Works autonomously from both a remote location and on-site.

  • Delivers reports as needed in person, via conference call or via video conferencing as per project deliverables.

  • Collaborate with members of the CIA Consulting team.

  • Conducts research as it relates to the scoop of the assigned project.

  • Works to execute the client contract and agreement to achieve the desired objectives and deliverables.

REQUIRED QUALIFICATIONS

PREFERRED QUALIFICATION


  • Bachelor’s and/or Master’s degree in a food, hospitality or business-related discipline strongly preferred.

 

REQUIRED SKILLS

  • Demonstrated excellent written and verbal communication skills.

Cook Position Summary: 

As a cook, your main job function is to prepare daily meals for all the residents in the living facility. You may also be asked to prepare special meals for facility events and parties.

 Responsibilities of the Cook:


  • Prepare and cook all food items and meals in accordance with planned menus and recipes ensuring all meals and food prepared are of high quality, palatable and appetizing

  • Assist in food preparation for special meals, parties, events, etc.

  • Prepare and serve substitute foods to residents who refuse foods served.

  • Make only authorized food substitutions and consult with and advise Dining Services Director on menu changes

  • Prepare food and serve in accordance with sanitary regulations, as well as with established policies and procedures.

  • Report any incidents or infractions to Dining Services Director.

  • Inspect special diet requests and orders to assure that the correct diet is being served.

  • Plan the timing of food production to coordinate with meal serving hours so that quality, temperature, and appearance of food are preserved.

  • Maintain control over meal portions and food consistency.

  • Estimate food requirements and controls serving portions thereby eliminating waste and leftovers.

  • Ensure that the next day’s items are in stock and pulled and thawing under refrigeration as dictated by the menus.

  • Open or close kitchen as dictated by department scheduling.

  • Assist, when requested, in the purchasing, inventory, checking in and storing of food and supplies.

  • Ensure that stock levels of staple/non-staple food, supplies, equipment, etc., are organized and maintained at adequate levels at all times.

  • Work closely with the Dining Services Director in specifying and selecting food products.

  • Ensure that food storage areas are clean and properly organized/arranged at all times.

  • Responsible for all cleaning items assigned and/or posted on daily/weekly checklist.

  • Ensure a sanitary work environment and conform to all local codes and policies regarding proper storage, handling and serving of food.

  • Dispose of food and waste in accordance with established policies.

  • Performs other duties and responsibilities as required or requested.
