Line Cook


The Line Cook position is responsible for preparing food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. The Line Cook is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.


Essential Functions



  • Prepares food served using established production procedures and systems.

  • Complies with established sanitation standards, personal hygiene and health standards. Observes proper food preparation and handling techniques.

  • Stores food properly and safely, marking the date and item.

Required Education and Experience


2 years of college or culinary training and/or extensive cooking and production experience.


Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.


Dishwasher


The position will ensure that all dishes, pots, utensils and other restaurant tableware are clean and sanitized to expectation. In addition, the dishwasher holds substantial prep cleaning and sanitation duties. It is essential that the dishwasher maintain kitchen work areas, restaurant equipment and utensils in clean and orderly condition. The role of dishwasher must also complete daily basic prep assignments in a timely manner.


The dishwasher reports to kitchen management and the Executive Chef. This is a non-exempt position.


Regular Duties



  • Operate the dishwasher to clean all dishes and cooking utensils

  • Properly maintain all dish machines and cleaning equipment

  • Perform the task required for washing pots, pans, and other equipment which must be washed by hand

  • Ensure that all glassware, silverware, pots, pans and kitchen equipment are properly washed, sanitized, racked, stored or re-stocked

  • Opening and closing duties as assigned

  • Ensures that assigned work area is maintained in a clean and safe condition.

  • Represents The Bicycle Hotel & Casino well in all contacts. Works as a team member. Maintains cultural sensitivity at all times.

WORKING CONDITIONS & PHYSICAL REQUIREMENTS:

Noise level in the work environment is usually loud. Must be able to work in a fast-paced environment with numerous distractions.
