GENERAL SUMMARY:


The Sous Chef is responsible for the proper preparation of the planned menu and the overall supervision of the kitchen employees. In the absence of the Dietary Services Director, the Sous Chef will assume responsibility for the entire kitchen operation.


 


PRINCIPLE DUTIES:



  • The Sous Chef organizes all employee work assignments and schedules.  Assists the kitchen staff in all aspects of daily assignments, as required.  Informs the Dietary Services Director of all activities and operational problems, making suggestions for improvement and corrections as needed.

  • Places orders to ensure an adequate supply of food is available for the menu cycles

  • Responsible for the direction of the department in the absence of the Dietary Services Director.  Creates, plans, and manages the execution of all menus and recipes; including but not limited to seasonal cycle menus, special theme day menus, and holiday buffets.  Assists in the annual performance reviews for all kitchen employees.

  • Interviews job applicants as directed.  Maintains the work schedules for kitchen employees.  Assists in ongoing in-service education programs for employees. Holds regular meetings with kitchen employees.

  • Assists in maintaining a high level of customer satisfaction for our residents and their guests.  Maintains the appearance, cleanliness and services of facility at or above Health Department standards through routine cleaning schedules.  Maintains daily, weekly, monthly statistical information as required.

  • Performs other duties as assigned.


 


QUALIFICATIONS:



  • Minimum of three years experience as a Sous Chef in a hotel, restaurant, or fine dining club with a degree in culinary; or a minimum of ten years experience in hotel, health care, or fine dining.

  • Health care and food & beverage experience highly preferred



  • Knowledge of kitchen equipment operations and maintenance. Some knowledge of nutrition and diet

  • Culinary education preferred

  • Engineer all menus items to ensure quality and proper margins.

  • Creates menus as needed for events, custom events, daily features and so on.

  • Identify and communicate successes and best practices to Regional Chef and/or VP Food & Beverage to help improve quality and financial results across the company.

  • Maintains constant communication between departments and keeps other departments informed about special programs and events.


Qualifications:
Education/Experience:



  • Previous experience in a Chef leadership role

  • High school diploma or equivalent required. Bachelor’s degree, Culinary degree or certificate preferred.


Certification and/or License Requirement:


  • Food service permit as required by local or state government agency. ServSafe certification must be obtained within 30 days of hire.
