 The Lead Bartender reports directly to the GM, Bar Manager and Manager on Duty. A well-rounded beverage professional with extensive experienced in bartending, who works efficiently in supervising a full-service bar and the upholding of standards. The Bar Supervisor will provide cocktail trainings for the staffs, provide feedback of employee performances to upper management, and will assist in coaching the nuances of the beverage culture at Wally’s. He/she will set standards to lead the team in providing exceptional, knowledgeable, efficient service to the guests, making their Wally’s experience memorable.



  • Reports to and follows directions and guidance of management.

  • Arrive to work on time, clean, groomed, and dressed ready for work.

  • Attend daily pre-shift with Manager(s) on Duty to review what is to expect of service before the shift starts. Communicate daily pre-shift notes to fellow bar team.

  • Be aware of Invitations.

  • Responsible for providing nightly bar order to closing manager by midnight.

  • Conducts monthly inventory of all non-alcoholic beverages, wine, beer, liquor and spirits.

  • Responsible for order, receiving & facilitate stocking of incoming inventory.

  • Responsible in making sure the bar is set up for preparations of weekly wines btg changes.

  • Oversee restocking of bar and mis en par between lunch and dinner service.

  • Follow ABC alcohol practices. Attempt to limit problems and liability related to customer’s excessive drinking by taking steps such as persuading customers to stop drinking or ordering taxis or other transportation for intoxicated patrons.

  • Work hand in hand with Bar Manager to execute any bar changes such as new cocktails and housemade ingredients.

  • Provide cocktail training for bartenders.

  • Consistently coaches fellow bartenders and upholds service standards.

  •  Follow cocktail recipes and pour measurement guidelines for spirits, liquor, beer and wine.

  • Comply with all departmental policies/service procedures.

  • Report employee performances to Bar Manager & GM.

  • Attend all scheduled meetings and bring suggestions for improvement.

  • Report the breakage, loss or theft of any restaurant property.

  • Be well organized, maintain concentration, and think clearly when providing service within any given period of time. Attention to details & teamwork.

  • Maintain complete knowledge of all menu items, labels, brands, beers, and non-alcoholic selections, correct glassware and garnishes.

  • Study and maintain knowledge of all wines by the glass and major updates on the wine list.

  • Maintain complete knowledge of all respective food menu items, prices, preparation method/time, ingredients, serving temperatures, portion size, garnish and presentation.

  • Maintain complete knowledge of Micros POS system.

  • Maintain a hygienic and safe environment at all times.



  • A minimum of 2 years experience in a Bartender’s position.

  • Ability to multitask and perform required tasks in a rapid and organized manner.

  • Be able to understand and communicate in English.

  • Be able to reach, bend, stoop and frequently lift up to 50 pounds.

  • Be able to work in a standing position for long periods of time (up to 8 hours a day).

  • Effective oral communication skills and the ability to work as a team player.

  • Must be impeccably groomed, maintain good hygiene, good posture and have required uniform.

  • Must display the ethical and professional standards set forth by Wally’s.

  • Must have the stamina to work up to 40 hours per week.
