Responsible for the management of all aspects of the Restaurant functions, in accordance with hotel standards. Directs implements and maintains a service and management philosophy which serves as a guide to respective staff.


  • Direct staff to ensure highest quality of service.

  • To ensure that clients are promptly and warmly greeted and attended to.

  • To provide any assistance, direct or indirect, that the restaurant staff may require.

  • To ensure the proper training of restaurant staff.

  • To ensure that the restaurants are adequately stocked with service supplies, and control their consumption.

  • To ensure that all staff reports to work in proper uniforms, well-groomed and punctual at all times.

  • To ensure that servers are well-versed in the preparation and presentation of every menu item, wines, and other beverages.

  • To maintain the reservation book, ensuring that all reservations are handled accurately and proficiently; confirm all reservations.

  • To ensure that information is properly entered and updated in the log book; confirm that all on-duty staff have read the log book.

  • To be attendant to clients to determine their level of satisfaction with service, menu items, etc. Report information with recommendations to the F&B Director.

  • To confer frequently with staff for their observations, ideas, and recommendations on policies, procedures, and the quality of product. Work with them to determine ways to implement these observations.

  • To ensure correct scheduling of staff and station assignments according to occupancy and events.

  • To coordinate holidays, vacations, (and overtime if necessary) for restaurant staff.

  • To work with the Director of Restaurants in matters of hiring, interviewing, disciplinary actions and terminations of restaurant personnel.

  • To provide input for restaurant employees performance appraisals.

  • To handle any guest inquiries, requests, or complaints that the subordinate staff are unable to, ensuring complete guest satisfaction.

  • To ensure constant communication and cooperation between all areas in matters pertaining to the Restaurants.

  • Inspect grooming and attire of staff; rectify any deficiencies.

  • Help ensure that the staff and the standards of the restaurant meet all applicable statutes. (ie. state/local liquor laws, Department of Health guidelines, etc.)

  • To comply with the hotel safety regulations and emergency procedures; to report any unsafe or hazardous conditions.

  • Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards; rectify deficiencies with respective personnel.

  • Inspect table set-ups; check for cleanliness, neatness and agreement to departmental standards.

  • Ensure that the host (ess) stand is clean, organized and stocked with designated supplies. Make sure that specified amount of menus and wine lists are available and in good condition for each meal period.

  • Review the reservation list, pre-assign designated tables and follow up on all special requests.

  • Prepare and submit daily/weekly schedule and payroll adjustments.


  • High school graduate, some college.

  • Minimum 5 years of experience as an assistant or restaurant manager. Preferably a 5 star restaurant.


  • Ability to lift and carry up to 20 lbs.

  • Ability to remain standing or walking throughout an 8 hour shift

  • Ability to ensure abundant physical movements throughout the work area.

  • Transporting trays of equipment, food and beverages to/from dining room.
