A good butcher is a craftsperson. You take pride in your knowledge, continually improve upon your skills, and consider it a privilege to share your training with others who are eager to learn.
This is you. Already a skilled butcher with experience ranging from whole carcass breakdown all the way to retail cuts. You know how to process beef, pork, lamb and goat to customer specifications. You are a team oriented individual who, beyond having the ability to butcher, is aware of the many hands and hard work that goes into an efficient butcher operation. You are a lightning quick, meat-loving, go-getter who looks forward to waking up early and working with a small, close-knit team in a fast-paced environment.

WHAT YOU'LL DO
As a Head Butcher, you are responsible for correctly cutting down carcasses into retail and wholesale cuts. You will coordinate with the Production Manager daily and with other team leaders weekly to determine priorities and schedule the workload accordingly.
You must have knowledge of the anatomy of animals, muscle groups, and how they correspond to cuts. You must have knowledge of relevant equipment, procedures, policies, and strategies used to comply with local, state, and federal requirements in order to protect staff, public health, and machinery. You must know and comply with the safety techniques used to store and handle both raw and cooked meat products.
The duties required of you include cutting, portioning, grinding, accurately weighing, and maintaining a clean and safe work area. You are responsible for sorting meat products accurately according to customer specifications, recording product and relevant information on forms and records. Candidates must be proficient with knife handling, safety etiquette as well as maintenance and sharpening techniques.
You are responsible for leading the Meat Cutters, to ensure there is proper butchering of meat. You must know how and be ready to receive and store meat upon arrival, to ensure meat quality, and record all required information. You must have excellent band saw skills, and be comfortable and ready to use power tools when necessary.

1+ year of management experience

Create, implement and hold team members accountable to systems set in place to ensure traceability and quality control

Maintain high sanitation standards
Operate all equipment safely
Power equipment usage and knowledge of cleaning and maintenance standards
Excellent knife skills
Ability to break down carcasses into primals, subprimals and individual cuts with precision, care and respect (knowledge of “nose-to-tail” carcass utilization)
Carcass cooler flow and organization
Raw fabrication and packaging
Organization of finished product
Manage product flow in an organized fashion to successfully fill all company orders
Maintain a professional working relationship with USDA inspectors
Strong written and verbal communication skills
Work with a sense of urgency
Able to work in a temperature controlled environment (below 40 F degree)

Adhere to safety and sanitation procedures and food safety compliance regulations
Must be able to stand 8 hours
Must be able to lift 75+ lbs regularly
Reach above shoulder level
