About Grease Box Oakland
I was born in Texas and grew up in South Louisiana. I graduated from LSU with a fine art degree, but was never really satisfied by the art world outside of college. I wanted to make something valuable that was appealing to everyone, regardless of their education level or cultural background. Meanwhile, I was working in cafes and restaurants that were doing just that by making food. I moved to California after Hurricane Katrina; it seemed like a good time to take a risk. I worked as a field office director for fundraising campaigns. After a year of politics, I got a job at Bette's Oceanview Diner in Berkeley where I met Hae, my wife (we just got married after being together for over 6 years!) We both left the cafe and I began working at farmers markets. Hae inspired me to consider the service industry as a career. I set my sights on jobs I wanted and figured out how to get them. I worked as a siphon barista at a top 3rd wave roaster, Blue Bottle Coffee. Then I spent a couple of years at Pizzaiolo, a well known Cal-Italian restaurant with a Chez Panisse alumni at the helm. I learned so much at these places and was constantly inspired by the beautiful food! Unfortunately, I could barely eat any of it because of my celiac disease, which can only be treated by a completely gluten free diet. I decided to open my own place where I could make all the beautiful organic food for myself and others and never get sick. BOOM.
